A masterpiece of time. This deeply amber cheese is packed with crunchy protein crystals and notes of burnt butter and toasted hazelnuts. Semi-hard Dutch cheese from pasteurised or raw cow's milk, brined and matured on wooden shelves in the protected region.

Perfectly paired with a dark Trappist beer or a glass of Port. Also excellent with oloroso sherry, quadrupel ales, and rye crackers.
Chef's tip: Let it come to room temperature to release its full caramel and nutty aromas. Slice thin for a cheese board or grate over pasta.
